A region where the kitchen doesn’t hold back on spicy chili peppers, fresh seafood, or excellent wine. We've prepared a special menu that will transport you to the southern Italian coast, where the air smells of olive trees and local markets are filled with cheeses, sausages, and fish that were still swimming in the sea this morning.

What’s on the special Calabrian menu at Aroma restaurants?

Carpaccio di Polpo
Thin slices of marinated octopus with lemon emulsion, cherry tomatoes, and arugula.
Octopus is a staple in Calabrian cuisine, thanks to the coastal fishing villages where seafood is served at its freshest.

Spaghetti con Salsiccia N’duja
Spaghetti with spicy N’duja sausage, marinated red onion, and Grana Padano cheese.
N’duja is no ordinary sausage. It's a soft, spreadable delicacy made from pork and a generous amount of chili peppers. In Calabria, it’s spread on bread, added to sauces, or eaten straight by spice lovers.

Pesce Spada alla Griglia
Grilled swordfish steak, served with grilled vegetables and a tomato sauce with anchovies, olives, garlic, and capers.
Swordfish is to Calabria what tuna is to Japan. Caught in local waters, it’s often sold fresh by fishermen at the market. It pairs perfectly with fresh vegetables and a Mediterranean-style sauce.

Tomato sauce, spicy salami, grilled eggplant, bell peppers, basil, and Grana Padano cheese.
Eggplant is everywhere in Calabria. It’s used in ragù, baked with mozzarella and parmesan, topped on pizza, and stuffed into sandwiches. Combined with spicy salami, it’s a match made in heaven.

Calabrian cuisine with a fiery soul

Calabria is wild and unpredictable—and so is its food. In poorer areas, people cook with whatever’s available. Every part of the animal is used, pasta is handmade, and fish is eaten the same day it’s caught.

If you’ve heard of Calabria’s most famous sausage—N’duja—know this: it’s not for the faint-hearted. It’s so spicy it’ll make your forehead sweat, but you’ll soon grow to love it.

Calabria is also one of Italy’s oldest wine regions. Legend has it the ancient Greeks loved the local wine so much they called the region “Enotria” – the land of wine. To complement our Calabrian menu, we recommend Primitivo di Manduria DOC, a robust red wine that pairs beautifully with spicy N’duja and grilled swordfish. Or try Gavi di Gavi DOCG, a crisp white wine with fruity notes, perfect with marinated octopus.
