Special Menu from the Marche Region at Aroma Restaurants
This July, we invite you on a culinary journey to the heart of central Italy – the Marche region, where the rustic flavors of the countryside meet the elegance of coastal cuisine.
On the map of Italy, Friuli (Friuli–Venezia Giulia) might seem inconspicuous. It’s a small piece of land nestled against Austria and Slovenia, near the city of Trieste. This Italian region is characterized by both the Alps and the sea, Roman history, and Slavic influences. There’s a strong Austrian touch here – goulash, game meat, speck. At the same time, you’ll find seafood, quality wine, and cheeses that have been made since the 18th century.
And in June, you can enjoy this colorful slice of Italy in Prague at all Aroma restaurants.
Special Menu from Friuli
Bruschetta with San Daniele ham, mascarpone cream, mustard, and anchovies, topped with sun-dried cherry tomatoes, opens the menu as a starter. San Daniele ham is one of Italy’s most famous delicacies, yet it’s still not as overused as Parma ham. It’s produced in only a few villages, matures for at least 13 months, and has a delicate yet distinctive flavor.
Next comes Blecs, wide homemade pasta served with a Montasio cheese sauce and sautéed king oyster mushrooms. You’ll find Blecs in every good trattoria in Friuli. Montasio cheese is named after a local mountain and is commonly used in pasta dishes or the regional dish Frico.
For the main course, Petto d’anatra – duck breast with traditional potato and onion pie Frico, accompanied by red cabbage gel and pickled sour cherries – arrives at the table.
The meal concludes with the Friulian version of pizza – Pizza con salsiccia, with a tomato base, mozzarella, salsiccia sausage, Montasio cheese, and pepper ajvar.
