The Doppelbock beer style originated in Bavarian monasteries. It was originally brewed by monks to help them get through the fasting period. Today, it’s no longer just sustenance for the penitent—it’s a treat for everyone. The strong Doppelbock 18 beer from Pivovar Kolkovna draws from this tradition—it’s full-bodied, malty, and guaranteed to warm you up.
Doppelbock: From Bavarian Monasteries to Kolkovna
Doppelbock ranks among the strongest bottom-fermented beers, and its history dates back to the Paulaner monks in Munich. During the fasting period, they needed a nourishing source of energy to help them endure days without food. Since beer wasn’t considered a breach of their fast, the monks began brewing a stronger version of the traditional bock beer—Doppelbock. It quickly became so popular that it spread far beyond the monastery walls and, by 1780, was being sold to the public.
A hallmark of Doppelbock is its rich maltiness, minimal bitterness, and pronounced alcoholic character. At Kolkovna, we’ve brought this tradition to Czech beer lovers in our own interpretation.
Fun Fact: Many beers of this style have names ending in "-ator," in homage to the original monks and their beer "Salvator."
An Explosion of Malt, Caramel, and Dried Fruit
At first glance, you’ll be captivated by its chestnut-brown color with ruby highlights. Thanks to extended lagering and a specific selection of malts, the beer boasts a clear, radiant hue and a rich foam, which may be less persistent—a typical trait of this style.
Aroma and Flavor of Doppelbock
When you take a whiff, you'll notice a strong malty aroma reminiscent of freshly baked bread, along with notes of caramel and dried fruits—mainly dark fruits like plums, raisins, and roasted nuts. On the palate, a rich maltiness unfolds. Hop aroma is subdued in this style, with bitterness kept to a minimum.
With an alcohol content of around 8%, it offers a gentle warmth while maintaining a smooth texture and medium carbonation. You’ll be left with a pleasant malty fullness and a hint of fruity notes on the tongue.
A Strong Beer Deserves Hearty Food—What to Pair It With?
Doppelbock 18 isn’t a beer for quick sips, but for slow savoring. It pairs best with bold dishes. It’s a perfect match for roasted pork knuckle or beef ribs served with homemade mustard and a baked pretzel. It also pairs wonderfully with pickled game sausages or smoked sausages in dark beer.
This strong beer also makes an excellent pairing with desserts. Treat yourself to a chocolate cake with cherry sauce—it complements the beer’s caramel and fruity undertones beautifully.
How to Serve Doppelbock Properly
To let all the flavors and aromas unfold, allow the beer to breathe a bit. The ideal serving temperature is between 10–13 °C (50–55 °F), when its malty nuances and warming alcohol come into full play.
