The palace formerly referred to by the name of its owners as Piccolomini or Sylva-Taroucca Palace is now more widely known as Savarin Palace. The building was designed by the renowned architect Kilian Ignaz Dientzenhofer in 1751. The whole structure was named after a coffeehouse, which was opened here in 1933. The coffeehouse acquired its name from the famous French connoisseur of food and drink - Jean Anthelme Brillat-Savarin (1755–1826), one of the best-known gastronomes, gourmets and gourmands, and an author of many books (particularly “Physiology of Taste”) and quotes about food and good living. Not surprisingly, many a restaurant, coffeehouse and dish have been named after him. Also, he was a leading person in establishing dining etiquette – his rules are followed even today. One of his famous quotes goes: “The discovery of a new dish does more for the happiness of the human race than the discovery of a star.” Kolkovna Palác Savarin offers seating areas on one floor and outdoors. The total number of seats is 357. The premises are fully air-conditioned with smoking allowed. Apart from Pilsner Urquell, there are also other beers served on tap, such as Velkopopovický Kozel stout and Birell Světlý. << less
